However you must remember that no matter what type of espresso bean you purchase, or how much you spend on it for that matter - the quality of your end drink will be severely affected by the grind setting on your espresso grinder. If the grind is too coarse then the water run through to extract your espresso will rush past the large grains, resulting in a far too quick extraction time and a poor quality espresso with little or no 'crema'. Conversely, a grind that is too fine will block the passage of water past the fine grains, resulting in a slow extraction and a burnt espresso! The accepted standard for brewing the best espresso is:-
The total extraction time should take between 18 to 24 seconds for 1 to 1 1/2 oz of espresso coffee. The true extraction time will vary depending on the espresso bean blend, and the proportions of Arabica to Robusta it has. We suggest you use shot glass sized at 1floz to check your extraction rate, the resulting espresso should resemble the picture on the left. If your extraction has suddenly increased speed with a poor crema, check that you have the correct sized pan for the handle you are using, the single spout pan should be shallow with a narrow filter base - very different from the double pans!
